Make sure the sheet is deep enough for your mattress. Some sheets are only 12'; deep and your mattress may be 15'; to 18'; or more. Most retailers sell extra deep fitted sheets. I have a queen pillow top as well and I use queen extra-deep sheets.
Also, the sheet will likely fit better if you get one that has elastic all around instead of one that has elastic only on the corners or only on the head or foot of the sheet. Most higher quality sheets have elastic all around.
You could also consider cotton/polyester sheets which will not shrink in the wash or jersey knit sheets which will stretch a little.
If none of that works, you could buy a king flat sheet and tuck the edges in all around to approximate a fitted sheet. You will likely have to redo it every morning though.What size fitted sheet does a queen size pillow top mattress take?

As said, you need a deeper fitted sheet.
I would strongly recommend you avoid anything with even a hint of polyester in it. Cotton will breathe better, which is especially important with a pillow-top mattress that tends to hold in warmth more.
You want to buy Queen fitted sheets with deep pockets to cover the pillow top. I have a king pillow top and the King deep pocket sheets work great!
